God of War Ragnarok does not feature a Point of No Return. You can always come back to complete side missions, and collect any collectibles which you might have missed after completing the main campaign of the game. There is absolutely no reason to rush through the game. 

You can complete side content even before completing the main story. However, some side missions, chests, or collectibles might require an item that you cannot obtain unless you play the campaign so be aware of that. If you want to avoid any kind of spoilers beforehand, it is suggested that you complete the campaign first before moving on to side content.

God of War Ragnarok has a huge campaign along with side content. The time to complete the game will vary from player to player. However, completing only the main campaign would take you 25-30 hours. If you want to achieve 100% completion, then it will take you around 55-60 hours. 

Even the side content for God of War Ragnarok is incredibly extensive. Exploring all the Nine Realms will take a lot of time but if you only want to complete the main story without completing any Favours, Treasures, or Collectibles, then it will take you comparatively less time.
